Latest batch of salsa runs out... pre-order for the next batch now

My goal in making Del Madero a self-sustaining business has unfortunately encountered a temporary road block... I've shifted my priorities to my 22 month old son, which won't leave enough time to proactively grow the business in the near future. In light of this priority shift, and the fact that my previous batch of salsa officially expired as of last week, I am changing my business philosophy moving forward. I am going to put the burden of promoting my salsa on the shoulders of my loyal customers. I will still coordinate running production batches of salsa, however to reduce the out-of-pocket expense of these batches, I will be collecting pre-orders for the salsa. Once the number of pre-order requests have achieved a critical mass (I am estimating about 250 jars right now) I will collect the payments up front, which should be enough to cover the expenses for running the new batch of salsa. So, for those of you who want salsa, it is up to you to help promote my salsa and collect pre-order requests in order to help me achieve a critical mass. Since I am selling the pre-orders for salsa nearly at-cost, I am ok if you want to "invest" in several cases of salsa and sell it through your own channels for a profit. I am hoping that through the power of word-of-mouth that fulfilling the quota for pre-orders should be feasible... but only time will tell.

Austin Chronicle Hot Sauce Festival - 2009

I will once again be hosting a booth at the Austin Chronicle Hot Sauce Festival this year. The festival is on Sunday 8/30 at Waterloo park. I will be sampling and selling my salsa, and there will be a people's choice award, so don't forget to help me out by voting for my salsa. Hope to see you there!

The Austin Hot Sauce Festival

This year I hosted a vendor's booth at the Austin Chronicle Hot Sauce Festival for the first time to sell and promote my salsa. You can see some pictures of the booth here: Hot Sauce Festival Pictures. The event was a blast... I sampled and sold a ton of salsa, and enjoyed hosting my booth with my friends at one of Austin's best annual events. The weather was really hot, but what do you expect during August in Austin?? Unfortunately, I didn't take away any awards this year, but hopefully I got plenty of exposure for my salsa.

Del Madero now taking orders!

The production and shipping process for Del Madero salsa has been validated, and we are now ready to start taking orders! We are still working on getting the salsa on store shelves in the Austin area, but in the meantime we are taking online orders and will ship the salsa directly to your home! I just created an email group through google that you can subscribe to for future updates (see the link at the bottom of this page if you are interested). We are getting very close to finalizing the pricing for internet sales, and we have our eye on a few local Austin farmer's markets and grocery stores - so this email group will be the best way to be notified about when and where you can get salsa in the future.

The Label Design is Complete! (click to see final labels)

For months I have been absorbed in the design of my label, agonizing over all the small details to try and get it perfect. I have consulted my wife, friends, and relatives for their advice, because I know I can only do so much on my own. A few weeks ago I finally submitted my design to the company who is going to print my labels, and asked their artist to make some suggestions. He certainly earned his pay by taking a label that was just 'good' to 'great' by making several subtle changes in the fonts and positions of the text. The final nutritional statement and barcodes were also added, making the label complete and ready to print. The next steps - printing the labels and finally putting them on my salsa bottles.

I am now an official member of Go Texan, which is a branch of the Texas Department of Agriculture that helps promote local Texas produce. I am just excited because I get to put their cool logo on my salsa labels :-)

9 Cases of Salsa - Done

After my latest visit with Gail at Gourmet Resources, I now have 9 cases (108 bottles) of salsa that are 'almost' ready to sell. My wife, Lisa, came down to the kitchen with me this time to see what all the fuss is about, and to help me taste the salsa after adding some more peppers for the hot flavor. We came home with 52 bottles of the Hot flavor, 52 bottles of the Original flavor, tried them out with some chips, and they still taste great! My next major hurdle is to finalize the label design and to get the initial labels ordered so that I can finally start selling some salsa!

Lab tests for the salsa finished

A sample of the salsa was submitted from the last test batch for lab testing. The lab test results for the salsa came back and it meets all FDA requirements. So, the next batch of salsa is ready to go, and is planned for December 28th.

Permission for Label Artwork Granted

The saguaro image on the label was created originally for the School Zone Institute, so Logan received approval from them to use the artwork on his label. Good saguaro drawings are tough to find, and this one fit the label theme perfectly.

Kunitz Foods LLC Created

In order to protect personal income, and to make the business more legitimate, Logan Kunitz filed with the state of Texas to form Kunitz Foods LLC as the host company for Del Madero Salsa.

Final salsa recipe is signed-off for production

After producing two test batches of salsa the final test batch turned out perfect, so Logan signed off on the recipe and the salsa is almost ready for production.

Logan finds a co-packer for his salsa
